easy summer salad

Monday, June 9

So here's something. I made dinner during Everett's nap today. And it's the top headline in today's personal news because around here, it's considered an accomplishment to have dinner even cross my mind before 3pm, let alone having it MADE. I put on some music, ate as I went, and not once did I have to say, "hang on just a sec" to a boy pulling on my pant legs, asking to go play trains. Indeed, I was completely, one hundred percent free to go play trains at 7pm today, and it was a luxurious experience for all. I don't know why I haven't done this sooner! Oh yes, because usually I'm dead to the world at 3pm too.

Easiest, yummiest, summer pasta salad

Prepare chicken:
Four chicken breasts, cut into bite sized pieces and sauteed in a tablespoon of olive oil, garlic powder, Himalayan pink salt, lemon pepper, a few drizzles of honey, and lemon juice.

Whole wheat bow tie pasta, cooked and cooled.
1-2 handfuls of halved cherry tomatoes
1 handful of Pitted Kalamata Olives
1 red bell pepper chopped
1 cucumber chopped {I had mine soaking in vinegar a few hours beforehand for an extra zing}
Torn handfuls of spinach and kale
Previously prepared honey lemon chicken
Drizzle of your favorite Italian dressing {or even just some olive oil and your favorite seasonings}

boom baby
