Can we talk about feeding toddlers for a second? I feel as if this blog wouldn't be my own if I didn't devote at least some portion to this topic. It is the compartment of my brain that is always open, always running, always calculating and measuring. How much he ate, when he ate last, how much of it was milk. The boy would drink his weight in milk. As soon as Everett's teeth started coming in all at once, his taste-buds got real picky and his appetite seemed to wane. Which is totally normal from what I've read, and maybe this is just my first-time-mom schtick doing its thang, but you know, I worry! It's been months and months of teething now, and we're still going strong. So lately, when we've found something good, relatively nutritious and most importantly THAT HE LIKES, we eat it allllll the time. My good friend Mitra introduced us to these bran flax muffins that don't taste like bran flax muffins, because they have chocolate chips in them and that's why they're beautiful. I pushed my sleeves up and Everett lost his shirt, and we turned on the oven and got cooking around the kitchen table this afternoon, going against everything we know to be true about eastern summers and no AC. Everett's getting to the age now where all he wants to do is help mama. Washing the dishes, cleaning the fridge out, making dinner, mixing muffins, he's right there on the stool next to me trying his best with the mixing spoon or leaving teeth marks in the apples. It's the very best.

So here it is! Our bran flax muffins that don't really taste like bran flax muffins at all:
Ingredients {this recipe is easily modified, as you'll see below}:

1 1/2 c white flour {I used Brown Rice flour, just cause I already had the stuff}
3/4 c flaxseed meal
3/4 c oat bran {I didn't have oat bran at the time, so I just used oatmeal}
1 c brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
1 1/2 c carrots shredded
1 c chocolate chips
2 apples, peeled and shredded {my friend Mitra used 1 apple and 1 ripe banana and it was super good too}
1 c nuts
3/4 c milk
2 eggs, beaten
1 tsp vanilla extract 
Preheat oven to 350 degrees. Lightly grease muffin tins or line with paper baking cups; set aside. Mix flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, chocolate chips and nuts. Combine milk, beaten eggs, and vanilla in a separate bowl. Pour liquid ingredients into dry ingredients and stir until ingredients are moistened. Do not over mix. Fill muffin cups 3/4 full. Make for 15-20 minutes. Yields 15 medium muffins. About 24 small muffins.

I don't understand all the numbers. Shall I use lemon, perxide, oil, or what? What is the best? Thanks for your info but waht a little a lot more.
